Pork salami with Barbera d'Asti wine (250g)


We should really have used a southern Italian wine for this salami as it is based on a Calabrese, slightly spicy and a little sweet from the cinnamon and Fabrizio Battaglino's delicious Barbera d'Asti wine. However, it is also a Soppressata of sorts as it has been pressed into an oval shape. Additionally it has been gently smoked to add an extra dimension.
