Smoked Loin of Pork (60g)
Lonzo (Lonza in Italian) is made from the loin and is meant to be a very tender, delicately flavoured cut. However, when we tasted smoked Lonzo at an evening market in the south of France it was revelatory, the smoke adding a delicious extra dimension to the delicate texture of the loin.
Serve finely sliced as part of a charcuterie board.
Pork, salt, black pepper, white wine (sulphites).
