Simple Pasta with 'Nduja
For two people:
Whilst the pasta is cooking, finely dice one shallot (or half a small onion) and soften it in a pan with a dash of olive oil.
Add a clove of garlic, minced or finely chopped then up to 100g 'Nduja, depending on how much of a kick you want.
Stir it all together before adding three or four tomatoes, roughly chopped (or you can use a tin of tomatoes) and cook for a few minutes.
When the pasta is ready, drain it and toss it in with the sauce and serve with grated Parmesan, Grana Padano or Pecorino cheese.
